Quarantine Recipes: Banana Bread

This is the first of a series of recipes you can do while you’re stuck at home in quarantine.
Ingredients:
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted softened butter
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract or maple syrup
3 ripe bananas
- Preheat the oven to 350° Fahrenheit.
- Spread butter on a 9 x 5 inch loaf pan so the batter doesn’t stick.
- In a medium-sized bowl, mix flour, baking soda, and salt and set aside.
- In a large bowl add softened butter and light brown sugar. Beat using a mixer at medium speed for two minutes until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Pour in vanilla extract while mixing.
- Cut up the peeled bananas into pieces and beat into the mixture. The batter will curdle.
- Gradually pour the flour mixture into the large bowl at a low speed until combined; don’t overmix.
- Pour the batter into the pan and cook in the oven for 45 minutes to one hour. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Place the pan on a rack to let it cool for 15 minutes.
- Your banana bread is ready to be served!
