Quarantine Recipes: Banana Bread

This is the first of a series of recipes you can do while you’re stuck at home in quarantine.

 

Ingredients:

1 1/2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted softened butter 

1 cup packed light brown sugar

2 eggs

1 teaspoon vanilla extract or maple syrup

3 ripe bananas 

 

  1. Preheat the oven to 350° Fahrenheit.
  2. Spread butter on a 9 x 5 inch loaf pan so the batter doesn’t stick.
  3. In a medium-sized bowl, mix flour, baking soda, and salt and set aside.
  4. In a large bowl add softened butter and light brown sugar. Beat using a mixer at medium speed for two minutes until smooth and creamy. 
  5. Add the eggs one at a time, beating well after each addition.
  6. Pour in vanilla extract while mixing.
  7. Cut up the peeled bananas into pieces and beat into the mixture. The batter will curdle.
  8. Gradually pour the flour mixture into the large bowl at a low speed until combined; don’t overmix.
  9. Pour the batter into the pan and cook in the oven for 45 minutes to one hour. A toothpick inserted in the center of the loaf will come out clean when the bread is done. Place the pan on a rack to let it cool for 15 minutes. 
  10. Your banana bread is ready to be served!
